Bread. I'm looking for a good banana bread with nut recipe. I've found several, but they never are exactly what I'm looking for. Most don't have any 'spices' for them, so maybe I'm looking for a cross between banana and spice bread recipe. Do you have a favorite banana bread recipe??

Ok..I found it..but created it all the same.
I found a banana bread recipe, but didn't care for the fact that it had no spices in it. I found a 'nut bread recipe'...that I liked the sound of..so I combined the both of them..it's FABULOUS!!

Recipe is:

2 Cups Self rising flour
1/2 tsp. baking soda
1 Cup sugar
1 Banana (all I had after hubby got them)
2 Large eggs or 4 small ones
1/2 C. nuts (I used pecans..use more if you like nuts, I know I DO!)
1 C or more of milk or buttermilk (I used buttermilk)
1/2 C. Vegetable oil
1 Tablespoon Cinnamon or more to taste

Ok..mix all dry ingredients including cinnamon. In seperate bowl, mix eggs, mashed banana, milk and oil. Add to dry ingredients and mix well. Add more milk if needed. Add nuts and mix. Pour into one loaf pan, bake 350 for ohh about an hour and 15 mins. Check it at an hour, but I needed to bake mine for the extra 10-15 mins.

OHMYGAWD..it is soo good! Give it a try!

That sounds WONDERFUL!! I have a favorite too, been in the family forever. I suppose you could add cinnamon, why not? I also have a banana cake that is to die for...want it?


BANANA LOAF



Cream:

½ C. marg.

1 C. sugar

2 eggs

3 mashed bananas



Add:

2 C. Flour

1 tsp. b. powder

1 tsp. soda

1 T. sour milk

1 C. nuts



Pour into loaf tin and bake at 350 for 1 hour.

This is one delicious cake, Sage. I start testing it after 30 minutes though, depends on altitude. I've given this out so many times. I wrote my own cookbook, not for publishing but printed it out and give it for gifts. Old family ones, mainly. Love to cook. Hedgewife quality again, right??? LOL



BANANA CAKE



½ C. B. sugar

½ C. W. sugar

½ C. marg.

3 bananas

2 T cream

1 egg. beaten

3/4 tsp. soda in 2 tsp. hot water

1 tsp. b. powder

1 ½ C. flour



Mix all ingredients in order given. Bake in 8" or 9" square pan at 350 for 45 min. Frost. (I use a little rum flavouring or butterscotch instead of vanilla in my icing - gooood!)
