			<description>Well, tomorrow I'll be canning up the last of the pears for this season. I didn't do as many as I thought I would get to (due to surgery) but I will get at last 10-12 jars set aside. 

 

I peel/quarter them..put them in water which I have added citric acid..then cold pack them into the jars heat a simple syrup to boiling, pour over the pears in the jar (leave 1/2 inch headspace) put on the lids then water bath for 20 min (timed after boiling begins). We are gleening the last bit of things from the garden..all of which consists of bell peppers, jalapenos, banana peppers, okra and believe it or not a good mess of green beans. So tomorrow I will be freezing all of this, first thing in the morning!

			<description><![CDATA[Well, got our first picking of plums yesterday. Isn't much, but it's enough to get several jars of perserves. So I guess I'll be doing that today!

We also picked more blueberries yesterday as well. Got a full basket of them, so that too is on my agenda! I'll probably freeze a good many of these, as I haven't frozen any yet.

			<description>Ok...here's my 'old fashioned mom recipe' for blackberry jam.

 

8 Cups of blackberries (whole)

5-6 Cups sugar

 

1/2 C lemon juice

 

Fill the sink with lots of cold water, dump in the berries. Swish them around carefully. Repeat. Put the cleaned and rinshed berries in a big pot, add sugar and lemon juice and turn the heat on!! LOL  (You wont need to add water, because there was enough water on the berries from rinsing)

I cook these on a medium to medium high heat bringing them  ...</description>
